Monsters!

Ever wonder what happens when you combine all your favorite cookies into one? I personally adore monster cookies, mostly cause it takes all my favorite parts of cookies and combines them.

I took this recipe from Baked (my new bible).
Monster Cookies

1/2 cups all purpose flour
1 tablespoon baking soda
Pinch of salt
5 3/4 cups rolled oats
3/4 cup cold unsalted butter
1 1/2 cups packed light brown sugar
1 1/2 cups granulated sugar
5 large eggs
1/4 teaspoon light corn syrup
1/4 teaspoon vanilla extract
2 cups creamy peanut butter
1 cup semisweet chocolate chips
1 cup m&ms (I didn't have any so I just doubled the choc. chips)

Whisk the flour, baking soda, and salt. Add the oats.
Cream the butter with the sugar on low speed. Scrape down the bowl.
Add the eggs, one at a time, scraping down the bowl each time. Add the corn syrup and vanilla.
Add the peanut butter. Mix until combined. Mix in the oats and the chocolate chips (and the m&ms).  Refrigerate for five hours.
Scoop 2 tablespoon size cookies onto parchment paper. Bake at 375F for 12 to 15 minutes.

This makes a LOT of cookies. But they're delicious.
